1. Chorizo, Beans & Slow-Cooked Eggs

Ideal for: A group or two hungry adventurers

Tip: Serve with crusty bread and your morning coffee. Perfect after a coastal sunrise.

Ingredients:

  • 1 can diced tomatoes

  • 1 can baked beans

  • 1 can four-mix beans

  • 1 onion

  • 1 chorizo

  • 2 garlic cloves

  • 4–6 eggs

  • Olive oil

  • Salt & pepper

  • Optional: fresh or dried herbs


Method:

  1. Dice onions and garlic finely. Cut chorizo into small cubes.

  2. Heat olive oil in a pan and add onion, garlic, and chorizo. Sauté on high heat until onions soften.

  3. Add all canned ingredients and simmer on medium for 10 minutes.

  4. Crack eggs directly on top of the mixture (do not stir) and cover with a lid.

  5. Let the eggs cook slowly until the tops turn white.

  6. Remove from heat, rest for 10 minutes, and season with salt, pepper, and herbs.

2. Avocado, Fried Egg & Mushroom Toast


Ideal for: Solo travellers or quick morning fuel

Simple, satisfying, and café-worthy — all from the back of your camper.

Ingredients:

  • Brown mushrooms, thinly sliced

  • 1 avocado

  • 2 eggs

  • Bread slices

  • Lemon juice

  • Salt & pepper

  • Olive oil


Method:

  1. Add a drizzle of olive oil to a pan and fry the eggs (cover to cook evenly).

  2. Set the eggs aside, re-use the pan for the sliced mushrooms and cook them through.

  3. Toast bread slices over the stove using tongs, about 20 cm from the flame.

  4. Slice avocado thinly.

  5. On a plate, layer bread, mushrooms, avocado, and tp with fried egg.

  6. Add lemon juice, salt, and pepper to taste.

3. Overnight Soaking Oats


Ideal for: Any group size, especially early starters

Perfect for early starts or slow mornings by the water — no cooking needed.


Ingredients:

  • 1 cup oats

  • 1 tbsp chia seeds

  • 1 cup milk of your choice

  • Toppings: choose from banana & honey, berries & mint, or apple & salted caramel


Method:

  1. In a bowl, mix oats, chia seeds, and milk. Stir well.

  2. Cover with cling wrap and place in the fridge overnight (or at least 3 hours).

  3. In the morning, uncover and add your toppings of choice.

  • Pack extra water: You’ll need it for both cooking and cleaning, especially in remote areas.

  • Check your gas bottle levels: Always carry a spare to avoid running out mid-adventure.

  • Plan ahead: Reuse ingredients (like pre-cut veggies or leftover rice) to save gas and washing up.
